Do you remember the days when the lunch bell rang, signaling the excitement of discovering the treasures hidden in your lunch box? Join me as I take a trip down memory lane, revisiting some items—some I’d rather forget—and the iconic snacks and treats that fueled my childhood adventures and satisfied my youthful cravings.
Growing up, due to my family’s financial situation, I relied on school-provided lunches. Most days, it was the only complete meal I had. Today, many students across the country still use the free lunch program. One of the strangest things I saw on the school menu was peanut butter sandwiches served with chili. That combination must be unique to Iowa because I haven’t encountered it in any other state where I’ve lived.
If I could create a school lunch item from scratch, it would be pizza. It was rectangular, soft, and delicious—the best thing on the menu. I would include a Korean dish called Bibimbap for the ultimate school lunch. It’s a rice bowl loaded with vegetables and topped with chicken, beef, or pork.
For many years, I ate simply to exist and didn’t take much pleasure in food. It wasn’t until I was stationed in Korea that I began enjoying what I ate. Now, I tend to favor an Asian style of eating.
The key to creating the ultimate lunchbox meal is to include fresh vegetables and good proteins like chicken or tuna. Make sure to pack a well-balanced and nutritious meal.
For breakfast, I would love to see quiche and breakfast burritos included in a breakfast box.

Even though we’ve traded our lunch boxes for grown-up alternatives and our tastes have evolved, the nostalgia of those beloved treats still reminds us of the innocence and delight of youth.
